HOW TO STORE CASINGS : Cover unused casings in brine solution or granulated salt and store in a refrigerator at 40º (4.44ºC) or lower, but do not freeze.
ELIMINATING BAD ODOR : Usually, all you need to do is air them out. Leave the container open in the refrigerator for a while. Or remove the tripe from the container and let it air out. If it's really bad, rinse the tripe in fresh water, soak it again in brine, and the odor will usually dissipate.
SKEIN: The traditional bundle of pig or sheep casings was 100 yards (91 meters). Today, most casings measure between 95 and 100 yards, or approximately 88 meters.
